ok, my bad, was looking at vim that I had system-wide tweaked and was
wondering why virsh does not honour them, but I should see vi instead.

Then run:
EDITOR=vim virsh edit $dom
to use vim as your editor, with your vim customizations. Or even add an
export of EDITOR to your shell startup files.
